Remember that gorgeous, delicious, luscious pumpkin pie I posted a little while ago.  Well, I got to thinking how wonderful it would taste with a graham cracker crust.  But not just any store bought crust.  A special one.  This is where those seemingly unnecessary homemade graham crackers come in.  I put the graham crackers, one tablespoon of coconut oil, and two tablespoons of almond milk in the Vitamix, and pulsed until combined.  I then poured the mixture into a pie tin and smushed the crumbs onto the bottom and sides of the pan.  Then, I made the pie filling and poured it into the crust, and cooked for 35 minutes.  When the pie was done cooking, I shoved it in the fridge until it hardened a bit.  Then, we ate it with ice cream for dessert.  It was spot on.  Literally there was no choice but to go back for seconds.  None.  Again, thank you so much Chocolate Covered Katie for both the crust and the pie.  You are my idol.  And also, sorry for not posting a couple days ago.  I try really hard to post something everyday but sometimes I just don't have the time!  Thank you all so much!
