Tonight we decided to go fancy for dinner.  We have had plain, scraped together meals all day, and wanted something better.  And what's fancier than good, old fashioned steak and potatoes!  We spiced up our steak a bit by adding some yummy blue cheese on top, and added a side of broccolini.  The veggies added some nice color, as well as being delicious.   Check out the recipe under the recipes tab!
It just so happens that tomorrow is a Farmer's Market day as well!  We will get to pick up some nice fresh fruits and veggies to make a special meal!  Comment 
 
Today has been a fairly quiet, stormy day.  I have had a lot of work to do, reading and writing for a school summer assignment.  As most people know, studying for a very long time can be EXTREMELY boring, and usually works up quite an appetite.  So, eventually I was very hungry.  

But what did I want to eat?
 
 I wanted something warm and gooey, and I needed something quick and easy.  I instantly thought of cookies, but there was no way I was baking them from scratch. What could I make instead?  Then it hit me.  I had seen this recipe on the blog The Burlap Bag (http://www.theburlapbag.com) a while ago, and had made it a couple times before.  Banana oat cookies.  Some people don't think they sound delicious, but trust me, once you have had one, you will want to eat them all!  And feel free to, because they are extremely healthy!  I once made these cookies for a friend who did not  like oats or bananas, and she LOVED them!  They also take about 2 seconds to prepare, and only 15 minutes to bake! Last summer, I had heard about a delicious sounding recipe for delicious, nutritious, homemade granola.  I really wanted to try it out, to see how good it was, and if it was easy to create.  We drove out to our local grocery store, and purchased all of the ingredients.  We mixed everything together, and then took a bite of it while it was raw.  It was SCRUMPTIOUS.  It was instantly a big hit, and there was barely any left to put in the oven!  Well, when it came out of the oven, it was just as good if not BETTER than when it was raw.  It was then warm and crunchy and altogether delicious.  After that, I forgot about that recipe for awhile.  I used store bought granola in my yogurt, which is awful tasting compared to this granola.  Then, this summer, I decided I wanted to give this granola another try.  When I took it out of the oven this afternoon, I knew it was the perfect food.  I could have it as a snack, as a dessert with chocolate chips, as a cereal in some almond milk, in my yogurt, even on top of ice cream!  The possibilities were endless.  It was pretty simple to create too!  Check out the recipe under the recipes tab!  Leave comments!  Thanks!
 
I have seen many recipes close to this one, such as salmon burgers, but I have never really found a recipe exactly like this one.  When I was thinking of what to make for dinner, the image of smooth, creamy guacamole and fresh, lemony salmon came to mind.  Unfortunately, I did not have any hamburger buns to put this delicious dinner on, so I improvised and just put the meal on a plate.  I served it with a little bit of cous cous on the side.  It was so easy to make, especially because the cous cous and guacamole can both be made while the salmon is in the oven.  It was delicious too, everybody was thoroughly full and happy when they were finished eating this dish!  I also wanted to remind you guys to check out our Twitter (@WeEnjoyFood), Facebook (We Enjoy Food), Pinterest (We Enjoy Food), and Instagram (@weenjoyfood).  We really appreciate all of our new followers, and we hope you guys continue to follow this blog and share it with your friends and family!  Leave suggestions on how to make this blog better!  Thank you!
 

Last night's dessert was absolutely amazing. We used the rest of our farmer's market fresh peaches to make a peach cobbler, and it was delicious. It was also so easy to make, and everyone loved it, including the little kids. We topped the cobbler with some delicious creamy French ice cream. I posted the recipe under the recipes tab! Sorry for not posting yesterday guys! Also, we don't get to communicate with you guys that much. I feel like this blog would be a lot better if you guys gave us some suggestions on how to post things that are more interesting/exciting/valuable for you to see! Last night we had an amazing dinner.  We grilled barbecue chicken, and some zucchini and peppers.  It was so fun cooking with my family, talking and laughing while we worked.  We also made a very patriotic salad!  For dessert we had the delicious farmer's market peaches baked with a delicious oat topping, with some ice cream on the side.  The real thing that made dinner amazing though was not the food, but the people that we ate with.  As it says under our about us tab, food brings people together, and it really is a magical thing.  After dinner, we put on our sweatshirts and brought out the beach blankets to watch the fireworks.  They were amazing!  We had a great time, and I hope you guys had an amazing time spent with family and friends!  Check out the recipes for the peaches and the salad under the recipes tab!
 
Today we took a trip to the farmer's market to buy some food for our 4th of july barbecue!    The farmer's market is a wonderful place to buy fresh fruits and vegetables.  There are so many local farmers that gather together to sell their goods.  Check back later to see what we create from our farmer's market goodies!
 
Tonight we made a wonderful quinoa salad with fresh veggies.  Quinoa is a great addition to any meal because it is quick and easy to make, and healthy.  It also has an amazing taste!  This salad went wonderfully with some homemade hummus and tzatziki!

There is nothing better in the summer than a nice juicy piece of watermelon in the summer.  Everything about a watermelon says summer.  The fun pink color, the greenish outside, and the sweet taste.  So there was no better fruit to put in our dinner tonight.  We made a delicious watermelon gazpacho that was an instant family favorite!  While we had so much watermelon, we decided that a watermelon spritzer would perfectly compliment our meal, so we served everybody a tall glass of sparkling water with chunks of watermelon in it.  You can find this recipe under the recipes tab!  And also remember to check us out on Twitter, Facebook, and Pinterest, and contact us with any comments/questions/suggestions!  We really want your feedback to help us improve the quality of our posts
 
Today we were having a very hard time deciding what to make for lunch.  Did we want a soup, a salad, or a sandwich?  Did we want mexican or mediterranean?  Finally, after a long time debating what to make, we decided that we didn't want to chose.  So we made a mediterranean salad, and a mexican soup.  Both were delicious, and extremely easy to make.  The fresh veggies gave beautiful color to both dishes.  Check out the recipes for both under the recipes tab, or click on the pictures.  The soup is also wonderful when eaten with tortilla chips!
