Today was honestly the hottest day ever.  A walk to the grocery store was torturous, the humid, hot air clinging to you and overheating you...yuck.  I was about to drop dead from the heat.  But it's a good thing I made it to the grocery store and back, or else we wouldn't have had the gorgeous watermelon salad that I made for the family!  It was great, and SUPER easy to prepare.  All you have to do is cut up the watermelon and feta (this step can be eliminated by just buying good old feta clumps), and drop some arugula and balsamic glaze on top (if you wish, you can also add mint and cucumbers).

Today has been another low key, relaxation day.  It was burning hot outside, too hot for the beach to be any fun unless you were in the water.  So we decided to stay inside.  And we just hung out, reading books and stuff like that.  And then, we actually had to think about what we wanted to eat for dinner.  Well, none of us felt like going to the grocery store or preparing a huge feast, so we looked through our cabinets, and there was some quinoa.  So dinner was quinoa with pasta sauce and cheese.  Simple, but delicious.
Since that dinner wasn't too exciting, I'm going to add in another of my favorite snacks.
These are the BEST.  I eat them plain, with salsa, guacamole, hummus, black bean dip, every way you can imagine.  You can get a 12-pack from Amazon.  They also make these in a bunch of other delicious flavors, my favorites are plain, sea salt, and cheddar (I actually haven't tried the other kinds, but I bet they are scrumptious.  So try them out!  You wont't b
 
Today it was burning hot outside.  I was already so red I didn't dare venture out into that kind of sun, not even with a gallon of sunscreen on.  So I had plenty of time to cook some stuff up in the kitchen.  I made a double-batch of my granola, eating most of it before it even went into the oven.  I made some lotion, and it turned out GREAT.  I got the recipe from the blog A Sonoma Garden.  They have a lot of great handmade, all natural skin care recipes, you guys should go check them out and try some of their recipes!  I even made my healthy cookie.  And now, for dinner, I am making a shredded vegetable salad.  It is delicious, but shredding 2 zucchinis, 2 beets, and 1 squash is a tiring job.  Not to mention that my hands are now stained a VERY bright red (actually, it's sort of a nice color).  We put some lettuce, feta cheese, avocado, cous-cous, and fish in with our shredded vegetables.  Here is a picture!

Today I had a great family day at the beach.  The water was beautiful and clear, it was warm, and there was a sandbar not far offshore.  We swam all day, and, yes, I got EXTREMELY burnt.  Honestly, my face is bright red, and it BURNS.  But it's all worth it.  
Then later, it was time to think about what to make for dinner.  I knew that I wanted fish, but I needed some inspiration on what to do with it.  I had recently bought a book called Eat Well, from Williams Sonoma.  It is such a great book!  It has so many easy, healthy, yummy recipes.  I have made quite a few of them, and they are great.  Anyways, I was looking through the seafood section, when I happened upon the halibut with mango salsa recipe.  I just knew I had to make it.  So we went out and bought some halibut filets, and grilled them up.  And as you know I am an experienced mango salsa maker.  So I made some delicious mango salsa for the top, and WOW it was delicious.  It was so delicious I don't even know how to describe it.  The textures went together magically and...  I just can't even it was too good.  Make it at home, everybody will really appreciate it.

More snacks!  I am obsessed with delicious snacks that are easy to carry around with you on all of your adventures.  And this:
is the perfect snack.  Somersaults.  They come in so many flavors, each one different, but equally as delicious.  They are the perfect size to eat as a snack anytime.  My favorite flavors are dutch cocoa, cinnamon, and sea salt.  During the school year I take them every day for lunch, and when I'm not in school i just eat them ALL THE TIME.  I usually buy them either at Whole Foods Market or on amazon.com.  Try them out!  They are a perfect food for the whole family!
 
When I was deciding what to do for dinner tonight, I was thinking about all of the different types of food I could make.  There are the obvious ones, and then there are the not-so-obvious ones.  Finally I decided on Costa Rican food.  It's pretty similar to Mexican food, but it has a little Costa Rican flair.  In Costa Rica, the main thing that they eat are rice and beans.  Rice and beans for breakfast, lunch, and dinner.  So of course, I made rice and beans for dinner.  Rice and beans with avocado, some salsa, and some broccoli.  Really simple, but absolutely delicious.  Some of us ate it in a tortilla, some of us just in a bowl.  You can even spice it up with some hot sauce.  If you are looking for a quick, easy meal, this is it.  Enjoy!
 
Sorry for not posting yesterday!  Today I'm going to tell you about my favorite snack EVER!!!  It probably will sound really weird to you guys but it is beyond delicious.  
Okay, so I buy a whole entire case of these from www.amazon.com.  I eat them all in about two days.  They are just that good.  And kale is great from you!  It's really a win win situation.  Try them out and tell me how you like them!  Again, I'm so sorry for not posting yesterday, and I'll post again later to make up for that!
 
    Today was a pretty uneventful day in my house.  It was nice and sunny, so we went outside for awhile, and pretty much just hung around.  But out of everything that happened today, something that really stands out to me is the fact that our solid perfume turned out EXTREMELY well.  After the cheese, I was convinced that the soap was going to be a COMPLETE failure too.  But it was not.  Even though we substituted coconut oil for beeswax, everything was okay.  Of course, it was a little more liquidy than it was supposed to be, but, what can you do.  It was our first try.  
    Tonight we made a blackberry crisp out of our Farmer's Market fresh blackberries for breakfast tomorrow morning.  It looks absolutely delicious.  Right now it's just sitting on my counter, staring at me, fresh out of the oven, steaming, warm, begging me to eat it, calling my name.  I want to eat it right now.  But I have to wait for breakfast :(.  Ugh.  But anyway, I'm keeping myself satisfied by picking the sugary oats off the top of it when nobody is looking!  
 
Today we decided that we wanted to make handmade solid perfume, and cheese, as well as dinner.  For the perfume I needed beeswax, sweet almond oil, and some essential oils.  For the cheese I needed milk, vinegar, and a cheesecloth.  So today, we walked up and down the aisles of two different grocery stores, looking for ingredients.  Essential oils, check, milk, check, vinegar, check.  But no sweet almond oil, beeswax, or cheesecloth.  

This upset us deeply.

There was so much stress, we were crunched for time, and our ingredients were nowhere to be found.  Don't laugh, you would be stressed to.  Finally, after much research, we learn that substituting coconut oil for the beeswax might work, and substituting a coffee filter for cheesecloth might work too.  And I eventually found some sweet almond oil at home.  So we start to make the cheese.  We boil the milk, constantly stirring.  All is well until we add the vinegar and the milk starts to curdle, and we realize that we burnt the milk.  So we start over.  And all is well this time.  Until we try to strain the curdles from the whey.  We have our coffee filters all ready.  We attempt to pour everything through the filter.

It is a real struggle.

The smell is enough to make anyone vomit.  Finally we get all of the curdles into the filter and we squeeze the liquid out.  The filter is ripping everywhere, and when we take a look at the cheese, it is a hideous, disgusting blob.  Nobody is too eager to eat this.  So it's hidden away in the fridge.  We haven't even attempted the perfume yet, so we will keep you posted.  And, oh ya, we cooked dinner too.  So we had shrimp tacos with our Farmer's Market veggies.  Here it is!
 
As I said yesterday, today was  a Farmer's Market day!  It was raining pretty hard this morning, so there were not many people there, which was wonderful for us, but not great for the kind people who come every week to sell their fresh goods.  We got many great fresh fruits and veggies today.  I even got some that I've never heard about before such as this fairytale eggplant,
this pattypan squash,
and this purple kohlrabi.
I also got some good old watermelon and peaches.  So, as soon as I got home, I started to think about what I wanted to make with my new goodies.  I decided to start by making some delicious, fresh, watermelon salsa.  The recipe includes watermelon, peaches, lime juice, cilantro, basil, and some tomatoes (I am not a huge fan of tomatoes, so I decided not to use them).  This salsa tasted great on some pita chips, and on my salad.
