Come up with one combination better than chocolate with peanut butter.  You can't.  Well, unless you hate chocolate or peanut butter for some reason.  So, when I found the recipe for chocolate peanut butter scones, I almost started crying.  They were gorgeous looking.  I had to make them.  And this morning was the perfect time to do it.  Here is the recipe:
Ingredients:
  • 2 cups of whole wheat flour
  • 1/4 cup of raw turbinado sugar
  • 2 teaspoons of baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 3 tablespoons of cold butter cut into 6 pieces
  • 1/2 cup of cocoa nibs
  • 2/3 cup of milk
  • 3 tablespoons of egg whites
  • 1/2 cup of creamy peanut butter


Directions:
  • Preheat oven to 375 degrees fahrenheit.  Line a cookie sheet with parchment paper.
  • Mix flour, sugar, baking powder, baking soda, and salt together.
  • Use electric mixer to stir butter in.
  • Pour the mixture into a large bowl and add chocolate chips.
  • Put milk, egg whites, and peanut butter into another bowl and use the electric mixer to combine.  Then, pour over the dry mixture and stir until just moistened.
  • Put mixture on parchment paper on the cookie sheet.
  • Knead into a disk, 8 inches in diameter, then cut into 8 wedges.  Place the wedges a couple inches apart on the cookie sheet.
  • Bake 15-18 minutes until golden brown and set.  Store in a closed container at room temperature.


These were super easy to make and the little kids love them!  Try them out!
 

Tonight was Mexican night again! We grilled up some halibut steaks and some tuna and put them on whole wheat wraps with cheese, guacamole, lettuce, and hot sauce. YUM. Grilled fish is officially my favorite food. Also, my guacamole was pretty darn good. Creamy, fresh avocados with a lime squeeze, and some salt and pepper. Easy, but DELICIOUS. And feel free to add peppers, salsa, hummus, strawberries, whatever you want to add to spice it up. I think it would fast great on sandwiches, and on some crunchy tortilla chips. Try it out! It's the perfect meal!

 
Another Vitamix soup!  I've tried many variations of this recipe, and I think I've finally found the best one.  I put 2 cups of vegetable broth, 5 quartered roma tomatoes, 1 garlic clove, 1/2 of 1 lime, peeled, 1/2 teaspoon of pepper, and 1/2 cup of black beans.  The Vitamix is AMAZING because it heats the soup up while blending it all together!  If you don't have a Vitamix, or just don't want to use it, you can either put the ingredients in a blender or food processor, blend until smooth, and then heat it up on a saucepan.  I also like to add some extra beans and chips in at the end for more texture.  It's delicious!
 
Everybody knows that fries are delicious.  The warm, salty, potatoeyness (what?) is just YUM.  So today I decided that I wanted to make fries.  Really badly.  So I did.  But of course I'm not going to fry any potatoes at my house because...yucky.  So I baked them.  And they were equally as good.  Here is the recipe:
Ingredients:
  • 2 lbs of sweet potatoes
  • olive oil
  • salt to taste
  • parmesan cheese (optional)
  • fresh parsley leaves (optional)
  • 1 clove of garlic


Directions:
  • Preheat the oven to 450 degrees fahrenheit
  • Cut sweet potato fries into slices (*warning*: sweet potatoes are hard to cut, so be careful)
  • Put the sweet potatoes on a baking sheet and mix them with salt and some olive oil
  • Place sweet potatoes in the oven until slightly soft and browned on the edges
  • Mix parmesan, garlic, and parsley in a bowl and mix the sweet potatoes with this mixture (optional)
These fries are perfect for little kids too!  Even though they are probably not used to sweet potatoes, just add a little ketchup 
 
Banana whip is delicious.  What is banana whip you might ask?  Blended frozen bananas.  That's it.  But it looks and tastes like soft serve ice cream.  And you can make it at home!  I usually make mine in the Vitamix, but you can probably make it in any blender or food processor you might have.  In fact, they also make a special banana whip machine, which makes the best banana whip EVER.  So try it out!  And also, sorry for the short post today!  
 
This morning we tried to go to the Farmer's Market.  It was a disaster.  It was drizzling, and there was a strong wind.  We were so late that there wasn't any of the good food left.  And we had really been looking forward to these breakfast bars that are sold there.  There were none.  Ugh.  So we decided to try to recreate them.  We put in 2 mashed bananas, 1 cup of oats, 1 tablespoon of flaxseeds, 1 tablespoon of hemp seeds, 1 tablespoon of chia seeds, 1 tablespoon of cocoa nibs, 1/2 cup of apple sauce, 1 egg, 3 dashes of cinnamon, 1 sprinkle of salt, 1 tablespoon of coconut butter, and 1 dash of vanilla.  They are DELICIOUS.  They do not don't taste exactly like the ones at the Farmer's Market, but they are a great replacement!  Try them out!
 
As you may know, I have wanted to make the Vitamix mint chocolate chip ice cream for a VERY long time.  But something has always gotten in the way of making it.  Not today, though.  Today, I finally got to fulfill my dreams.  And it was delicious.  I put 1 handful of spinach, 1 handful of kale (without the spine), 1/2 of an avocado, 1/4 cup of raw agave nectar, 1 cap full of peppermint, and 3 cups of ice in the Vitamix.  I assume you could make this recipe in a normal blender or food processor too!  You can't taste the spinach, kale, or avocado at all!  It's perfect for everyone, even the little kids.  Try it out!
 
We finally used the Vitamix!  And it was delicious!  For dinner, we made a simple pasta with lemon artichoke pesto and chicken.  On the side, we made our watermelon gazpacho!  Which was great, as always.  But for dessert, I REALLY wanted to make something in the Vitamix.  REALLY.  It's so fun to use.  So I decided to make pineapple strawberry sorbet.  It took 3 WHOLE BAGS of frozen strawberries, a cup of fresh strawberries, a cup of pineapple, and 2 cups of orange juice, but it was absolutely worth it  Everybody loved it.  If you have a Vitamix at home, you should definitely try this out!

Today we got a new Vitamix.  If you don't know what a Vitamix is, you are missing out on so much.  The Vitamix is the single most amazing invention ever invented.  If you think I'm getting too excited over a blender, you are wrong.  It is much morYou can make literally anything, soup, smoothies, dips, salad dressing, peanut butter, tomato sauce, ice cream, sorbet, ANYTHING.  We have had one in the past, and used it everyday to make a smoothie for breakfast.  I just wanted to tell you this to warn you that many, many Vitamix posts are coming up next.  Because I make everything in it.  EVERYTHING.  One of my favorite things to make in the Vitamix is mint chocolate chip ice cream made out of spinach, kale, avocados, and some other stuff.  I know, I know, it sounds repulsive.  But it tastes exactly like ice cream.  I won't give away too much now, but get ready!  Here it is:  the wonderful Vitamix!
 
Today is so much cooler than yesterday!  It is the perfect day to go outside and take the dog for a walk.  Well, on this fine day I have decided to post another favorite snack.  Rice cakes.  I know rice cakes sound a bit boring.  They are just some rice and salt baked together.  But these rice cakes are delicious.  I eat them plain, with peanut butter, with jelly, with cream cheese, with applesauce, with hummus, with black bean dip, with cheese, and with fruit.  They are the perfect anytime snack.
I know I have said this 50,000,000,000,000 times, but you can order these in 12 packs from Amazon.  My family usually goes through them pretty quickly, and I think yours will too.  Also, I know you guys are probably really bored of snacks, so I will try to post something REALLY exciting either later today or tomorrow
