Today I was at the Farmer's Market when I happened upon a beautiful place that sold beautiful mozzarella.  It instantly made me think of a caprese salad.  So, I hunted down some gorgeous tomatoes and fresh, organic basil.  And let me tell you, this was the best lunch ever.  The mozzarella was so smooth and creamy, with just a hint of sea salt.  I thought it would look really gorgeous all stacked up!  So here it is!  
 
Okay, every time I'm on Pinterest I see pictures of black bean brownies that look delicious, but are horrible in reality.  I've always wanted them to work out for me, though, because the black beans are supposed to make the brownies very rich and creamy!  When I found this recipe on Chocolate Covered Katie, I decided that I really wanted to try it, because all of her other recipes have been delicious!  And guess what!  They are quick, easy, healthy, and the best brownies I've ever had!  I could've never imagined such a rich, strong, unhealthy taste from a black bean brownie.  And, the best part is that if you do not disclose the ingredients in these brownies to your children, they will never know.  Try them out!

Today, I'm going to share with you something that I have made before, but not recently, and was just thinking about today.  It is the rainbow salad.  When I last made it, I just chopped up a bunch of different colored fruits and veggies and threw them together.  But I want to spice things up a little bit.  I was browsing the internet for some salad inspiration, and came upon Martha Stewart's shredded rainbow salad.  Perfect!  That would be a great way to change things up!  Maybe I'll make a great salad dressing too!

Now I'm going to talk about how great the rainbow salad is for you!  So, let's say I have a salad that is partly fruit and partly veggies.  I have raspberries, tomatoes, carrots, yellow peppers, pears, spinach, avocado, blueberries, cauliflower, and blackberries.  Delicious!  The raspberries have antioxidants that fight cancer, vitamin K, and a ton of fiber.  The tomatoes have cancer-fighting antioxidants too, they are great for your heart, and they act sort of like sunscreen too!  The carrots are full of beta-carrotine, ward off cancer, and helps your eyes.  The avocados are filled with healthy fats, the list goes on and on!  Do I need to say anything more?  Try this out at home!  It's delicious and nutritious!

Hi guys!  Last night I was looking through recipes, when I stumbled upon this one: Whole wheat pasta with chicken and veggies.  It sounded perfect!  Quick, easy, and delicious!  So I decided to make it for the family.  It was a hit!  Pasta is always a favorite with little kids, and the veggies added a nice healthy aspect to it!  Plus, it looked gorgeous!
 
I'm so sorry for not posting this yesterday, but my internet wasn't  working!  So just pretend this is from yesterday!  Yesterday, I went on StumbleUpon, and I think I found the best food blog ever.  Thug kitchen.  Oh my goodness, it's hilarious.  But that's beside the point.  I found some pretty great recipes on there too!  So I decided to try one out!  I tried the stuffed peppers, and let me tell you, they were MAGNIFICENT.  The best part about it is that it's grilled.  Stuffed peppers on the grill..wow.  The peppers were the perfect bowl for the rice filling!  They were also great with some steak!  And it was super easy!  Try it out!
 
Everybody loves chocolate chip pancakes.  There is just something about their, warm, doughy, chocolatey flavor that makes you feel at home.  So, when I found this delicious recipe, I was all for it!  So, this morning, I decided to make them!  They were super easy to make, and they only took a few minutes on the stove to cook!  Yum!  They were delicious!  I mean, they look nothing like the ones in the recipe, but I still enjoyed them!  Try them out!  
 
As you can tell, I have no sense of seasons.  Seriously, pumpkin pie in the summer?  So, I'll continue on this path of creating holiday goods in the wrong seasons.  Today I attempted to make a shamrock shake.  It tasted good (not like a shamrock shake), but it looked absolutely different from a shamrock shake.  It was definitely not green.  I made my shake out of frozen banana, milk, cocoa nibs, cocoa powder, frozen spinach, and mint extract.  It's definitely worth a try!  The little kids loved it!  And it's healthy!
 
Remember that gorgeous, delicious, luscious pumpkin pie I posted a little while ago.  Well, I got to thinking how wonderful it would taste with a graham cracker crust.  But not just any store bought crust.  A special one.  This is where those seemingly unnecessary homemade graham crackers come in.  I put the graham crackers, one tablespoon of coconut oil, and two tablespoons of almond milk in the Vitamix, and pulsed until combined.  I then poured the mixture into a pie tin and smushed the crumbs onto the bottom and sides of the pan.  Then, I made the pie filling and poured it into the crust, and cooked for 35 minutes.  When the pie was done cooking, I shoved it in the fridge until it hardened a bit.  Then, we ate it with ice cream for dessert.  It was spot on.  Literally there was no choice but to go back for seconds.  None.  Again, thank you so much Chocolate Covered Katie for both the crust and the pie.  You are my idol.  And also, sorry for not posting a couple days ago.  I try really hard to post something everyday but sometimes I just don't have the time!  Thank you all so much!
 
Ok, this may sound weird, but I made my own graham crackers.  Why you may ask?  That's so random you may say.  But I made them for a specific purpose.  I am making pumpkin pie today, and I really wanted to have a fancy crust for it.  Why didn't I use store bought graham crackers?  Why am I making another pumpkin pie in the summer?  I don't know.  It was a challenge to make them.  They look delicious though, and I think they will work fantastically for my crust.  So don't make any judgements.  I'll post the pie later and you will all see.
 
I'm sorry for so many Chocolate Covered Katie posts, but I can't help it.  She literally posts the best recipes I have ever seen in my whole entire life.  Wow.  So, I was looking through her website for what was probably the hundredth time and found this beautiful, healthy, crustless pumpkin pie recipe, I was over the moon.  Every year since I can remember pumpkin pie has been a HUGE part of Thanksgiving.  We would all eat slice after slice, savoring the magical pumpkin flavor.  An easy, healthy way to make this pie in my own house?!?!?!?!?!?  YES PLEASE.  So I had to try this out.  And thank goodness I did.  I was SUPER AMAZING.  I could have eaten the entire pie.  No joke.  So, all you pumpkin pie fans out there, get cooking.  You will never ever be disappointed by this recipe.  Ever.
