Sugar cookies are delicious.  There is no denying that.
So I decided to make them even better by using dark brown sugar instead of regular sugar, and you can bet I was happy with my results.  These cookies are the perfect amount of sweet and salty, and they melt in your mouth.
So here's the recipe:
Ingredients:
  • 1/2 cup all-purpose flour
  • 1/2 cup regular oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark brown sugar
  • 5 tablespoons canola oil
  • 1/2 teaspoon vanilla extract


Directions:
  • Preheat oven to 350 degrees fahrenheit.
  • Combine all ingredients in a medium sized bowl.
  • Use an ice cream scooper to scoop equal sized balls of cookie dough on to a cookie sheet.
  • Bake for 12-15 mins.

I love soup.  I don't know why, there is just something about it's warm, rich taste that's super delicious.  So I decided I wanted some soup for lunch.
I looked in my fridge and I was like oh my goodness I have a lot of carrots and also a lot of broccoli so that's what I will make my soup out of.   And so I did. (Great story, right!)
Here is the recipe so that you can eat soup too!
Ingredients:
  • 3 carrots
  • 2 broccoli florets
  • 2 tablespoon olive oil
  • 3 cups veggie broth
  • 1 can garbanzo beans (15 oz)
  • salt
  • pepper


Directions
  • Chop up the carrots and take the tops off of the broccoli.
  • Put the broccoli in a medium sized saucepan on low heat with the olive oil and some salt and pepper.
  • Let sit for 3 minutes, then add the broth.
  • Bring to a boil, then put on medium heat for 10 mins.
  • Add the garbanzo beans at the very end.
  • Put half of the soup in a blender and puree it, and then put it back in the pan.
That seems super easy, right!  It's the perfect dinner recipe for busy weeknights!
 
Everybody likes a chocolate chip cookie.  Especially those thin, crispy ones that are so delicious.
So that's what I decided to make today.  They are actually perfect and so delicious I can't even handle it, and the best part is I made them in about 2 seconds.
And you need to know the recipe too that you can feel the same kind of happiness over these cookies as I did.

Here it is!

Ingredients:
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 sticks unsalted butter, room temperature
  • 1 cup raw turbinado sugar
  • 1 cup packed light-brown sugar
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 egg whites
  • 2 cups dark chocolate chips

Directions:
  • Preheat oven to 350 degrees F.
  • Whisk together flour and baking soda in a small bowl and set it aside.
  • Put all the butter and sugar in a medium sized bowl and beat on medium speed until light and fluffy.
  • Put on low speed, and add a quarter cup of water and all of the other ingredients except for the chocolate chips and the flour mixture.
  • Add the flour mixture
  • Stir in the chocolate chips.
  • Use an ice cream scooper to scoop cookie dough onto a cookie sheet (put the cookie pretty far apart because they flatten out).
  • Bake for 12-14 mins and let cool.

 
I really don't think that there is any better combination than peanut butter and chocolate in the world.
That's why, when I was trying to create a recipe to bake today, I instantly thought of that combination.
And it didn't fail me.  This cookie is the perfect blend of the two, with rich dark chocolate chips and a whole lot of chunky peanut butter.  Yum.  These will take you about 2 seconds to create, they are the easiest things ever.
So here's the recipe!

Ingredients:
  • 1/2 cup unsweetened applesauce
  • 1/4 cup agave nectar
  • 1/4 cup light brown sugar
  • 1 egg white
  • 1 cup oat flour
  • 1 cup chunky peanut butter
  • 1/2 cup dark chocolate chips


Directions:
  • Preheat oven to 350 degrees F.
  • Combine applesauce, agave, and sugar in a medium sized bowl.
  • Stir in the egg.
  • Stir in the oat flour and the peanut butter until smooth.
  • Stir in the chocolate chips.
  • Bake until golden brown.

Yes, you read that right.  Healthy Key Lime Pie.
Look at it.  It's beautiful (that's because I made it in my new springform pan.  yes I am very excited about it).

Once upon a time, I was sitting on my computer, searching for something good to bake for myself.  Then I found it.  Pumpkin muffins.  And not just any pumpkin muffins, but amazing pumpkin muffins as created by Pinch of Yum.  I had to make them.  So I did.
